Beef in Oyster Sauce (蚝油牛肉)

This is another example of Filipino-Chinese cuisine. I have used baking soda to tenderise the meat, which was necessary because of the cheap cut of beef. Feel free to omit the step if you're using tenderloin or other cut that might not need it. I have again omitted all onion and garlic; if you want them, add them when you stir fry the ginger. 🇵🇭🇨🇳

Steps
- 1
Dissolve baking soda in water and soak beef in it for 15 minutes. Rinse thoroughly. Optional if you are using an already tender cut.
- 2
Season the beef with salt, pepper, soy sauce, and oyster sauce. Let marinate for 30 minutes.
- 3
In a wok or pan heat oil over medium high heat. Stir fry the ginger and chilli flakes until fragrant, about 1 minute. Add beef, stir fry until cooked through, about 5-6 minutes.
