Cooking Instructions

Soak 2 cups dark brown lentils in water for 1 to 2 hours

Soak 1 cup chickpeas until it softens then boil them and add salt, lemon juice and cumin while still in the water

Grate 2 onions and put thim in a pot with oil and fry until brown then add salt, pepper, spice, rosemary and cumin and mix well

Add 3 cups of water to the pot with the fried onions then drain the lentils and add them to the pot and keep mixing them until the water boils

Rinse 2 cups of rice then put it in the boiling water from the previous step and mix well and leave until the rice absorbs the water then turn down heat to low and leave it until it's cooked

Boil 200 grams pasta then drain it and put it in a small pot with oil, salt and pepper and leave it on low heat until it's cooked.

Slice 2 onions and put them in a pan with some oil and fry it until it turns brown then drain it and add salt, pepper and spice

For Sauces:
1- Tomato Sauce
Blend 1 kg of tomatoes, 3 cloves of garlic and a sliced green bell pepper and put the mixture in a pot with salt, white vinegar, lemon juice and oil and put it on low heat until the mixture thickens. - 9
For Sauces:
2- Duqqa (Garlic Sauce)
Blend 5 cloves of garlic, water, vinegar and lemon juice and put the mixture in a pot with salt and cumin and put it on the stove until it boils - 10
It's commonly served in layers:
Bottom layer: the rice mixture
2nd layer: the pasta
3rd layer: the hummus
(drain the hummus before serving)
4th layer: the fried onions
Top layer: sauces

From the kitchens of ESMA MATOOK (my Grandmother), MARIE DAVID (my Mom) and THE SHEIK (yours truly).I can remember as a child, in the winter time, mom would make this classic Syrian dish for us.Like Beef Stew, Kousa is one of those comfort foods served on those cold unforgiving winter days. Though, it's good anytime of year!Kousa is traditionally made with green zuchinni, however, yellow summer squash can also be used.It uses ground beef (typically 73% lean) and rice stuffing with spices which is called "Hashwey" (pronounced Hush-way) in Arabic. Hashwey is a base Arabic rice stuffing which is not only used in Kousa but also used in stuffed grapevine leaves, cabbage, eggplant, peppers and yes, even potatoes.The most time consuming part of the preparation is coring out the insides of each squash.
