66 • Okonomiyaki or "Japanese Pizza" 🇯🇵

Like pizza, you can put a bit of whatever you want in okonomiyaki... The base is usually cabbage and batter, with shrimp and bacon often added, but you can also use squid, thin slices of pork or beef, or octopus. Once cooked, it's spread with a reddish, sweet sauce (so it looks a bit like our pizza), then topped with Japanese mayonnaise and very thin flakes of dried tuna (katsuobushi) that add a lot of flavor.
👶🏻 The base is rich in cabbage, and for me, it's a great way to get kids to eat vegetables because you can't really tell it's there!
I usually make it with shrimp and bacon, but this time I used pork cheek and shrimp sautéed with leek.
🍕And like pizza, it's really delicious and makes every occasion feel like a celebration. Here in Spain, I discovered they call it “Japanese tortilla” since it's a national dish for them, like pizza is for us! 😂

In a bowl, combine the flour, salt, and eggs. Start mixing with a whisk, then gradually add the water, stirring vigorously to eliminate small lumps before incorporating all the water, continuing to mix.

Clean the cabbage, cut it in half, and remove the core. Slice it thinly, then chop it a bit more to get smaller pieces.

Slice the green part of the scallion and chop the ginger into small pieces. Add the vegetables to the batter and mix well.

Prepare the other ingredients you'll need. This time, I used chopped shrimp and sliced pork cheek.

Mix them into the batter, but set aside some pork cheek to place on top before cooking the second side, so it stays crispy and flavorful.

Heat a griddle or non-stick pan well, and add a bit of sunflower oil. Pour some batter and level it with a spatula. Now place the remaining pork cheek evenly on the surface. Cook for a few minutes until the bottom becomes a bit dark.

Flip it using a large spatula and continue cooking until done and slightly golden.

Place it on a plate, drizzle with okonomiyaki sauce in a zigzag pattern, then add mayonnaise in parallel lines, sprinkle with dried tuna flakes, and enjoy it hot!
