I made this clear stewed beef noodle soup with tender beef and vegetables that melt in your mouth. The broth is clear and delicious, truly amazing!

Wash the beef shank and blanch it in boiling water with green onions and ginger for about 2 minutes. Remove, rinse with water, and drain.

Place the blanched beef shank in a pot with chopped daikon, carrot, ginger slices, green onions, onion, Sichuan peppercorns, bay leaves, and add 8 1/2 cups (2000 ml) of water. Cover the pot, bring to a boil over high heat, then reduce to low heat and simmer for 90 minutes.

Once the beef and vegetables are cooked, separate the beef, vegetables, and broth. Reheat and add noodles when ready to serve.
