Sev tameta sabji is very popular sabji at gujarat.
It is prepared with tangy tomato gravy.

Steps

For preparing gravy : take a mixture blender and add chopped tomatoes and grind it and make a puree.

After that add onion, garlic and ginger in mixture and blend it. Meanwhile chop tomatoes for sabji.

For preparing sabji: heat the oil in pan and add cumin seeds, mustard seeds and asafoetida. When seeds crackle then add onion, garlic & ginger puree and saute it well.

After 2-3 minutes once it turns golden brown then add tomato puree and stir well for few minutes. Further add chopped tomatoes in it.

Nextly, add spices like turmeric, salt, cumin coriander powder and red chilli powder and combine well. Now add kasuri methi, garam masala and kitchen king masala and stir well.

Furthermore add 2 tbsp curd and combine well.

If required add little water in it. And after 3-4 minutes off the flame of gas and add sev and coriander leaves and mix well.

Serve it with paratha and buttermilk. Enjoy.
