Baked Tuna Korokke

I make this dish when I don't feel like deep-frying in hot oil or when I prefer a healthier meal.

-You can also make the mashed potatoes by peeling their skins, soaking in water and microwaving in a heatproof dish.
-If it's too much trouble to bake in the oven, you could also heat it in a toaster oven by wrapping them with aluminum foil to prevent charring. Recipe by YO-NE

Ingredients

  1. 2 largePotato
  2. 180 gramsGround pork
  3. 1 canCanned tuna
  4. 1half Onion
  5. 200 mlPanko
  6. 1*1 tablespoon + 1 tablespoon Mayonnaise
  7. 2 tspeach Salt, pepper
  8. 1 tbspButter (or vegetable oil)

Steps

  1. 1

    [Preparation] -Mash the potatoes. -Drain the oil from the tuna. -Chop the onion finely.

    -Roast the panko on a heated frying pan until browned (do not add oil!)

    -Add the butter to the frying pan and sauté the onions. When translucent, add the ground pork and stir fry. Once the color of the meat changes, add the tuna, salt, pepper and continue frying.

    -Put the mashed potatoes and the sautéed mixture from Step 3 in a bowl. Add a tablespoon of mayonnaise and mix together. Form into cylindrical patties as shown.

    -Spread a thin layer of mayonnaise on the patty and coat with panko. Right before serving, bake in the oven at 180°C for 15 to 20 minutes and it's done.
