A childhood favorite—whenever my mom came home late from work and didn’t have time to make anything besides soup, she would quickly whip up these eggs for the whole family. I’ll always remember how delicious it was!

Crack the eggs into a bowl. Add 1 tablespoon fish sauce and pepper, then beat well. Dice the tomato. In a pan, sauté the white part of the green onion with the tomato until the tomato softens. Add the eggs and stir with chopsticks.

Continue stirring until the eggs form soft curds. Don’t overcook, or the eggs will become dry. Add some chopped green onion, transfer to a plate, and sprinkle with more pepper.
