Black-Eyed Pea Ceviche Black-Eyed Pea Ceviche
Ceviche is a dish that is seen in Mexico generally prepared with seafood, or in more modern interpretations, ground beef. The seafood or meat is marinated in citrus juice until 'cooked' thoroughly. The ceviche is then mixed with a blend of diced vegetables and seasonings, all served over a crunchy tostada. The problem with many vegetarian interpretations of this dish is that the ingredients used don't pack in enough flavor. You want this to taste like more than a simple pico de gallo. Our recipe uses black-eyed peas, which provides it's own unique tastiness! Izandro -
New Year’s Day Black-Eyed Peas New Year’s Day Black-Eyed Peas
I love black-eyed peas any time of the year, but they’re part of the traditional meal around our house on New Years Day. This is one of those recipes where “to taste” matters! Most folks ignore this step. I’ma taster myself, I start out with minimal seasoning, taste it, add a little bit of this or that.My hubby doesn’t particularly care/like them, he’ll eat a bite “for tradition”. Lol. I found this recipe a few years ago, justa tad different from what I normally fix, his response…those are better than what you’ve fixed before! 🙃 Sonya Bankester -

New Year’s Day Black Eyed Peas New Year’s Day Black Eyed Peas
Folk Lore: Black Eyed Peas on New Year’s Day brings good luck for the entire year. My Granny used to drop a new penny (washed of course) into the pot of black eyes before serving, saying whoever got the penny would have a pocket full for the year. She never said what the pocket would be full of though. Back then, my pockets were usually full of pretty rocks that I’d find. #GoldenApron23 Sonya Bankester -

I used this recipe from a wonderful site I use a lot. I revised to my families liking, but here is the link. My son does not like greens. However, next time, I'm gonna have him pick them out.
