Wash the potatoes and cook them in water with the skins on so they don't absorb too much water.

Once the potatoes are cooked, peel and mash them with the butter and spices until very smooth.

Add the tuna, olives, onion, and parsley. Mix all the ingredients together and let the mixture rest in the refrigerator for 15 minutes.

Take the mixture and form medium-sized balls. Flatten them in your hands, using flour to prevent sticking.

Coat the croquettes in flour, then dip in the eggs, then coat with breadcrumbs. Fry in preheated oil over low heat for about 1 minute on each side until golden brown. Enjoy your croquettes! 🤤
