Mix onions, tomatoes and mandazi in a bowl

Add salt and pepper to your preference

Beat the eggs in a separate bowl in order to make sure the eggs are not rotten

Then mix the eggs in the tomato mix.

Beat till evenly mixed

Put oil in a pan. Then pour the mixture in the pan.

Let it cook on one side the turn the other side

Once done, place on a plate then sprinkle the carrot to garnish.
