Ingredients

  1. 6Small Brinjals
  2. 5 TbspSesame Oil
  3. 1/2 tspMustard seeds
  4. 1/2 tspUrad Dal
  5. 15Shallots Finely chopped
  6. 5Garlic pods roughly chopped
  7. leavesFew Curry
  8. 1Medium Sized Tomato Finely chopped
  9. 1/2 tspTurmeric powder
  10. 1 tspChilli Powder
  11. 1Lemon size Tamarind
  12. Water as required
  13. As per taste Salt
  14. 1Small piece Jaggery
  15. leavesFew Coriander
  16. FOR STUFFING:-
  17. 1 tbspChilli Powder
  18. 1 tbsp.Coriander powder
  19. 1/2 tbspThick Curd
  20. as per taste Salt

Cooking Instructions

    Wash and Cut the Brinjal stem and cut it into four pieces. Put it in water.

    Make dry paste using the ingredients given for Stuffing.

  3. 3

    Take out the Brinjal from water and stuff with that paste. Keep it aside.

  4. 4

    Add 1 cup of water to a pan. Allow it to boil and add tamarind. Let it boil for 5 mins in medium flame. Switch off the flame and keep it aside.

    In a kadai, add 2 Tbsp oil. Add the stuffed Brinjals. Keep the flame in medium and fry it on all sides till the skin colour changes.

    In a curry pan, add 2 Tbsp oil. Once oil gets heat, add mustard seeds. Let it splutter. Add urad dal and fry it.

    Add shallots,curry leaves,garlic and little salt. Saute till the shallots becomes translucent.

    Add tomatoes and turmeric powder. Saute till it becomes mushy.

  9. 9

    Add the fried brinjals along with that oil. Add chilli powder and coriander powder. Mix well for 2 mins. (Adjust the chilli powder according to your taste and spiciness).

    Add the tamarind pulp and required water. Check for salt. Allow it to boil for 10 mins. Switch off the flame.

    Atlast add jaggery and 1 Tbsp Oil. Garnish with coriander leaves.

    Transfer to a bowl. Now it's ready to serve with hot rice.
