Ingredients

  • 1 cupraw peanuts
  • 1onion
  • 1tomato
  • 1green chilli
  • 1 teaspoonginger paste
  • 1 tablespoondry mango powder
  • 1 tablespoonred chilli powder
  • 1/2 teaspoonturmeric powder
  • 1 tablespooncoriander and cumin powder
  • 3 tablespoonjaggery
  • 1 teaspoontomato purée
  • 1 teaspoonlemon juice
  • 2 tablespoonoil
  • 1fresh bay leaves
  • leavesFew curry
  • 1 teaspooncumin seeds
  • 1/2 teaspoonmustard seeds
  • 1 tablespooncoriander leaves

Steps

  1. 1

    Soak peanuts in boiling water for 30 minutes.

    In a food processor purée tomatoes, onion, garlic, ginger and green chillies.

    Wash peanuts thoroughly and add 1 cup water. Add a pinch of salt and pressure cook for 3 whistles.

    In a pan add oil, cumin seeds, mustard seeds, bay leaves, tomato purée and curry leaves. Once it starts fluttering add in the prepared purée and mix well. Keep the heat to low setting.

    Add in salt to taste, turmeric, chilli powder, mango powder, lemon juice, jaggery, coriander leaves,cumin and coriander powder. Mix well and add the boiled peanuts including the water. Mix and cover. Let it cook until the gravy is thick and oil leaves sides.
    Enjoy with roti, puri, paratha, naan etc.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
