Sweet Chestnut Paste Made with Ice Cream

I wanted to hold on to my heavy cream to use for whipped cream and decorating, and I knew milk wouldn't be rich enough, so I figured I'd try making the paste with ice cream.

Warm the chestnuts in the microwave for about 1-2 minutes and mash. While mashing, melt the ice cream in the microwave for about 30 seconds.

Mix the chestnuts and melted ice cream. Strain through a strainer or sieve to smooth. Add brandy or rum as desired.

You can use it as-is on toast, or on pancakes, or mix with whipped cream to make a chestnut cream.

Mix it with whatever ice cream you have for a chestnut ice cream.

It makes a large batch, so I store it in a tub.

If putting it in a pastry bag for something like Mont Blanc, mix with milk, heavy cream, or whipped cream until it can be piped out easily!
