First, blend 1 pound (about 500 grams) of sugar beets with 1/3 cup (100 ml) water. Once blended, strain through a fine mesh sieve. You will only use the juice for this recipe; discard the pulp. You’ll need 1 1/4 cups (300 ml) of juice. With this amount, I got about 2 cups (500 ml).
In a bowl, add both flours in a mound, the yeast, and a little beet juice. Start mixing the yeast with the beet juice.

When well combined, add the lard and continue kneading.
Once the lard is incorporated, gradually add more beet juice, then add the salt.
Keep kneading with the beet juice until all the flour is incorporated.

Form a smooth, even dough ball. Drizzle a little olive oil on the bottom of the bowl and place the dough ball on top. Score a cross on the surface and sprinkle with a little flour.
Cover with a lid or plastic wrap, then wrap the bowl in a blanket and let rise in the turned-off oven for 6 hours.

After this time, take one quarter of the dough. The other three quarters can be used for another recipe.

In a round baking pan lined with parchment paper, drizzle a little olive oil and spread out the dough.
Wash and dry the tomatoes, cut them in half, and arrange them on the focaccia as you like. Sprinkle with salt and drizzle with olive oil.
Let rise in the turned-off oven for 2 hours.

After this time, drizzle with more olive oil and bake at 430°F (220°C) on the lower rack for 15 minutes, then for another 5-8 minutes on both upper and lower heat. These times are approximate!
