Ingredients

  1. For the dough: 4 cups flour (about 500 grams)
  2. 1/4 cupolive oil or any neutral oil (60 ml)
  3. 2 teaspoonsyeast
  4. 1 teaspoonsugar
  5. Pinchsalt. Warm water as needed
  6. For the filling: 1 pound ground beef (about 450 grams)
  7. 5tomatoes, grated and drained of excess water
  8. 2onions, finely chopped (or more, as you prefer)
  9. Green bell pepper, red bell pepper
  10. 1 teaspoonminced garlic
  11. 1/2 bunchparsley, finely chopped
  12. 1 tablespoontomato paste
  13. 4 tablespoonspomegranate molasses
  14. Mixed spices, cinnamon, nutmeg, paprika, dried mint, black pepper
  15. Hot green pepper (optional)

    Mix the dough ingredients together and knead well until you get a soft, smooth dough. Let it rise for 30 minutes.

    Prepare the filling by mixing all the filling ingredients and spices together. It's important to drain the filling to remove excess liquid so it's easier to seal the dough and the edges don't open.

    Once the dough has risen and doubled in size, take a portion and roll it out on a floured surface until thin. Cut into circles, add the filling, and pinch the edges together as shown.

    Continue until all the dough and filling are used. Arrange the pies on a baking sheet lightly greased with oil.

    Bake in a preheated oven at 350°F (180°C), top and bottom heat, until cooked through and golden brown.

    Serve hot or cold with ayran (yogurt drink) and enjoy the best homemade sfiha with its special flavor. This recipe makes about four and a half trays; you can use half the amount for a smaller family.
