Assembled in 10 Minutes! Bakery-style Banana Bread

My whole family loves bananas, so I'm always trying to come up with my own recipes.
This uses very ripe bananas, so I don't add a lot of sugar.
This is a recipe that my family have been enjoying for over 10 years!

Use very ripe bananas.
Don't mash the bananas too much. The cake has a nice texture if you leave them a bit lumpy.
Cutting the slit down the middle halfway through baking makes it look really nice.
If you bring the egg to room temperature, it won't separate from the butter when mixed. Recipe by Puru berry

  • 3Ripe bananas
  • 70 gramsSugar
  • 60 gramsButter or margarine
  • 2Eggs
  • 150 gramsPlain white flour
  • 5 gramsBaking powder

    Line your baking pan with kitchen parchment paper. Directions for how to line a pan properly can be found here.

    Soften the butter in the microwave (300 W at 35-40 seconds). It should take on a mayonnaise-like consistency. Preheat the oven to 180°C (356 Fahrenheit).

    Add the sugar to the butter and mix.

    Add the egg and mix.

    Mash the bananas with a fork until they reach your desired consistency.

    Add the mashed banana to the Step 4 bowl and mix together.

    Sift together the flour and baking powder and add to the batter. Fold in until there is no flour streaks.

    Pour the batter into the pan. Drop the pan on the counter from a small height a few times to release any air bubbles trapped in the batter.

    Bake in the preheated 180°C (356 Fahrenheit) oven for about 40 minutes. At about the 11-12 minute mark, take it out of the oven and, using a knife, make a slit down the center of the top.
