Low sugar strawberry jam

Cooking Instructions

Pour the sugar over the washed and de-stemmed strawberry in a heavy bottomed saucepan or pot

Cook over medium heat stirring occasionally until the sugar is completely melted

Add the lemon juice and zest and continue cooking until the temp reaches 220°F.

If you do not want it too thick, then remove from heat once it boils for a few minutes. For a thicker consistency, cook until reduced for about an hour or so.

Pour into sterilized jars but leave some space at the top. For immediate use, just cover, set at room temperature overnight and then refrigerate. For longer conservation, invert the jars upside down for a day and then flip back before you refrigerate. This will seal the jars.
