Stir-Fried Loofah (清炒丝瓜)

When loofah is in season, I love to make this quick stir-fry. It only takes a few minutes, but the taste is so comforting. I added scallions, black pepper, and a little five-spice powder to give it more depth of flavor. The loofah turns soft and juicy, almost like it makes its own light broth. Perfect with a bowl of rice! Enjoy !

Peel and cut the loofah into chunks. Prepare the scallions and garlic.

Heat oil in a pan or wok. Add garlic and half the scallions, stir-fry until fragrant.

Add the loofah with a drizzle of water, and stir-fry over high heat until it softens and releases some liquid.

Add salt, black pepper, and five-spice powder. Stir well, add the remaining scallions, and cook for another 30 seconds. Serve immediately.Enjoy!
