Mathris are delicious crackers very popular in North India. These super crispy delights are packed with flavour. It also makes a great accompaniment for your evening tea.

Mathris are delicious crackers very popular in North India. These super crispy delights are packed with flavour. It also makes a great accompaniment for your evening tea.
Steps

In a parat bring together Maida, kalonji, 2½ tbspn Ghee and Salt to taste. Knead a tight firm dough using very little water.

Now make very small balls from the dough. Keep them covered with a moist cloth to avoid drying of the dough.
Flatten each ball using a rolling pin. The uneven edges of the mathri are perfectly fine as thats the way it should be. The thickness of the mathri should be around 2mm. - 3
Prick the mathri using a fork. Lay them nicely over a clean plastic sheet and let them stay for one to two hours. This drying method helps mathri reduce soaking too much oil.

Heat ghee or oil in a deep kadhai for frying. Fry them in small batches of 12 to 15 mathri at one time.

Fry the mathris on a low to medium heat until crisp and golden brown in colour.

Remove from heat. Let it cool down completely and store them in an airtight container.
This quantity yeilds 50 to 60 small size Mathris.Enjoy the mathris with green chutney and a hot cup of tea.
