Butter Beans My Grandma’s Recipe

I originally come from a rural area in the north west of Greece a small village near Ioannina. My grandmother was a farmer and a really good one. She was also a great cook and I have numerous of her recipes that bring back fond memories.
One of those recipes is this, for butter beans that she grew in her garden.

Heat oil over medium heat in a large pot. Add the onion diced and the garlic sliced. When soft add the capsicum and cook for 3-4 minutes until soft.

Add the beans and stir slightly. Add the tomatoes roughly chopped. The tomato sauce and paste. Season to taste and add the oregano and the sweet paprika.

Chop and add the parsley. Add a bit of water to cover and simmer until the beans are soft.

Make sure the sauce is nice and thick and serve with lots of feta cheese, some olives and a loaf of bread.
