Blackberry, Mint and Chia Ice Lollies 🌱

I have so many blackberries that grow in my garden, I don’t know what to do with them! I also have lots of mint🪴 These were last years favourite and will be first up when my blackberries ripen! They are quite sour, but this is how I like them. I guess you could add something to sweeten if you prefer. Tip; don’t give to children in white clothing 🙊

Ingredients

  1. Blackberries
  2. Chia seeds
  3. Lemon or lime
  4. A fewmint leaves
  5. A little water, coconut water or plant milk (don’t add the lemon or lime if making milk version)

  1. 1

    Whizz ingredients together, retaining a few blackberries and mint leaves.

  2. 2

    Add to lolly tray and freeze until solid. Enjoy outside ☀️

Very nice Rachel. We don’t have any blackberries in our garden but there are zillions in the wood across from our house and they’re a few hundred yards away from the road so no fumes. Free and we love ‘em. Blackberry and apple pie remains my favourite comfort pudding!
