Elderflower Syrup - No Citric Acid

I was lucky to pick some of the last elderflower blossoms this morning just around the corner from my house and I made some syrup for a couple of recipes. Here is added to some water for a refreshing drink. Citric acid is used to preserve this longer and is available at pharmacies. I didn’t use it in my recipe because the quantity is small and won’t be stored for a long time.

Pick your blossoms trying to leave as little as stalks as possible. Slice your lemons and place in a container.

In a saucepan add your water and bring it to the boil. Add your sugar once the water is boiling and wait for it to dissolve. Once you have a sugary syrup ready, pour over the lemon and elderflower and soak for about 5 hours. Sieve through a muslin a couple of times, before pouring in a bottle ready for the fridge.
