I based this on a recipe I found in a macrobiotic cookbook.

I based this on a recipe I found in a macrobiotic cookbook.

■ Prepare both the minced lotus root and the grated lotus root. ■ Mince the onion.

Sauté the ☆ ingredients. Heat a small amount of sesame oil in a frying pan, then sauté the minced lotus root and onion until they're cooked through. Add the soy sauce and salt, then cool.

While cooling, grate the lotus root. In a bowl, lightly mix (do not knead) the grated lotus root and the mixture from Step 2 with the whole wheat flour and 1/2 teaspoon salt. When the mixture can be gathered into a ball, divide into 6 equal portions, roll into balls, then flatten into patties.

Heat 2 teaspoons sesame oil in a frying pan and slowly fry both sides of the paddies over low-medium heat. When they fry to a nice golden brown, swirl in the soy sauce, then it's ready to serve. ♪
