Ingredients

  1. Marinade:-
  2. 2Large boneless, skinless chicken breasts
  3. 125 grplain yogurt (I use a thick Greek style)
  4. 2 tablespoonslemon juice
  5. 6 clovesgarlic, minced
  6. 1 tablespoonminced ginger
  7. 2 teaspoonssalt
  8. 2 teaspoonsground cumin
  9. 2 teaspoonsgaram masala
  10. 2 teaspoonspaprika
  11. Option can Use a Tikka Spice mix instead of the 3 items above
  12. Sauce (masala):-
  13. 3 tablespoonsoil
  14. 1large onion, finely chopped
  15. 2 tablespoonsminced ginger
  16. 8 clovesgarlic, minced
  17. 2 teaspoonsground cumin
  18. 2 teaspoonsground turmeric
  19. 2 teaspoonsground coriander
  20. 2 teaspoonspaprika
  21. 2 teaspoonschili powder
  22. 2 teaspoonsgaram masala
  23. 1 tablespoontomato puree
  24. 1Large Tin Chopped tomatoes
  25. 300ml
  26. water
  27. 250 mlDouble cream
  28. fresh coriander Leaves to serve

Cooking Instructions

    Slice the chicken into cubes. Then add the chicken with the yogurt, lemon juice, garlic, ginger, salt, cumin, garam masala, and paprika and stir until well-coated.
    Cover with Cling Film and refrigerate for at least 1 hour, or overnight.

    Preheat the oven to 260°C. Line a high-sided baking pan or roasting tray with parchment paper.
    Place the marinated chicken pieces on a wire rack over a baking tin so that the heat can go around all the chicken without needing to turn. Bake for 15 mins or until the edges start to brown.

    At the same time Make the sauce: Heat the oil in a large pot over medium heat, then sauté the onions, ginger, and garlic until tender but not browned. Add the cumin, turmeric, coriander, paprika, chili powder, and garam masala and stir constantly for about 30 seconds, until the spices are fragrant. Stir in the tomato puree, tomato sauce, and 1 ¼ cups of water, then bring to a boil and cook for about 5 minutes. I quickly blitz with a stand mixer (optional) Pour in the cream.

    Remove The chicken from the Oven and put into sauce. Cook for 2 more mins then serve with some fresh coriander. Eat with my homemade Naan (see other recipe) WOW!!!!!!!

I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
