Ingredients

2 servings
  1. 1/2 cupinstant oats
  2. 1.25-1.5 cupswater
  3. 3 tspmilk
  4. 1/4 cupmixed veggies(I have taken beans, carrot,sweetcorn,peas)
  5. as requiredcurry leaves
  6. 1Green chilli
  7. 1/2 tspginger paste or grated ginger
  8. 3 tsponion chopped
  9. 5 tsptomato chopped
  10. as requiredCoriander leaves chopped
  11. 3 tspcapsicum chopped
  12. 1 tsp Small piece jaggery or sugar(optional)
  13. 1/2 tspsambhar powder
  14. 4 tspgrated Coconut
  15. Tempering ingredients:
  16. 1/2 tspchana dal
  17. 1/2 tspmustard seeds
  18. 1/2 tspjeera
  19. as needed Cashews
  20. as requiredHing
  21. 1dry red chilli
  22. 1 tspOil or ghee

    1.Dry roast the instant oats for 5 minutes and keep aside

  2. 2

    2.In a pan,add tsp of ghee or oil,add the tempering ingredients first,followed by curry leaves,green chillies,ginger paste. Saute for 30 seconds. Then add onion and fry till it becomes translucent. Then add tomato,capsicum, jaggery,coriander leaves, mixed veggies, coconut and fry well.Add salt and then sambhar powder. Sambhar powder enhances the flavour and aroma.

    3.Add water for the veggies to cook.
    Then add milk.Milk gives a creamy taste to the upma.

    4.Once the water starts boiling, add roasted oats and cook till water is completely absorbed. Instant oats cooks very quickly.
    Serve hot with a tsp of ghee and coconut chutney.
