1.Dry roast the instant oats for 5 minutes and keep aside

2.In a pan,add tsp of ghee or oil,add the tempering ingredients first,followed by curry leaves,green chillies,ginger paste. Saute for 30 seconds. Then add onion and fry till it becomes translucent. Then add tomato,capsicum, jaggery,coriander leaves, mixed veggies, coconut and fry well.Add salt and then sambhar powder. Sambhar powder enhances the flavour and aroma.

3.Add water for the veggies to cook.
Then add milk.Milk gives a creamy taste to the upma. - 4
4.Once the water starts boiling, add roasted oats and cook till water is completely absorbed. Instant oats cooks very quickly.
Serve hot with a tsp of ghee and coconut chutney.
