Bengan is such a nutritious vegetable yet many children do not eat it. Infact children generally do not like to eat vegetables.
Through this recipe I have enhanced the regular flavours of commonly made dish of aloo bengan by adding the chatpata achari flavour to make the dish more tasty and rich in flavours so as to attract both kids and adults to motivate them in to eating vegetables.

Steps

Cut the potato fry in oil till light golden brown colour.

Wash and cut the brinjal (bengan) and fry in oil till light golden brown colour.

Fry the potato, brinjal and take a side.

Take a pan add oil, onion paste, ginger garlic paste, tomato paste and fry till light golden brown colour.

Add all dry spices, green chilli and bhonify the Masala.

Add fry potato, brinjal, kasuri methi and mix well and cook for 10 minutes on low heat for dam.

Serve hot with roti or naan 😋
