Quinoa Upma/Instant One Pot Healthy Dish

To celebrate this week I would like to emphasize the importance of being 'nutrition smart' in our families. This is possible only by mass awareness. We all need to know how nutrient rich is our food. The recipe I have chosen today has Quinoa which is one of the most nutrient rich ingredient. It is unique because it contains all 9 amino acids that are essential for our wellbeing.
I have made this quinoa upma that is healthy as well as delicious if cooked with available veggies. It is a one pot quick recipe.

I have made this quinoa upma that is healthy as well as delicious if cooked with available veggies. It is a one pot quick recipe.
Steps

Rinse quinoa using running water to get rid of the outer white part as it may cause. Bitterness.

Heat oil in a pressure cooker. Add 3-4 almonds and fry. Add ponch phutan and allow to splutter.

Then add onion, ginger and green chilli. Saute till onions are translucent. Mix the peanuts.

Add chopped tomatoes, turmeric, salt and red chilli powder and saute till tomatoes are soft and mushy.

Mix the chopped veggies and pav-bhaji masala. Saute for a minute. Add water and allow to boil.

Add washed quinoa and mix well. Put the lid and cook for 1 whistle. Lower the flame and allow to cook for 2 minutes.

Allow to release the pressure automatically. Add lemon juice, mix well. Serve healthy hot Quinoa Upma and enjoy.
