Ingredients

25-30 minutes
12 servings
  1. 1/2 cupbutter or 1 stick
  2. 1/2 cupcocoa powder, I used Hershey’s special dark
  3. 1 cuperithritol
  4. 4whole eggs
  5. Large splash vanilla
  6. 3/4 cupcarb quick OR almond flour+1 tsp baking powder
  7. 1 (10 oz)bag Hershey’s no sugar chocolate chips
  8. 1 1/2 cupchopped pecans or walnuts, optional

Cooking Instructions

25-30 minutes

    Preheat oven to 350. In a saucepan over med/lo heat, melt the butter, then add the cocoa powder until smooth. Turn off heat and Add in the erithritol and combine. Set aside.

    In another bowl, beat eggs and vanilla for 3 full minutes. 4 minutes if you have patience. Add the chocolate butter mixture into the eggs and beat well until combined. Add the carbquick (or almond flour and baking powder) and stir just until mixed. Add the chips and pecans and mix to combine.

    Spread batter in a sprayed 9x6 baking dish. Bake until the top center is firm but still slightly jiggly under the surface, about 30 mines. Allow to cool most of the way before cutting.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
