Preheat your oven to 410°F (210°C).
In a saucepan, bring the water, butter (cut into small pieces), and salt to a boil. Remove from heat and add the flour all at once. Mix well and vigorously, then return to low heat and stir constantly to dry out the dough.

Transfer the dough to a mixing bowl. Add the eggs one at a time, mixing well after each addition until smooth. Stir in the shredded cheese, season with pepper and a pinch of nutmeg.

Using a piping bag fitted with a tip, pipe small mounds onto a baking sheet lined with parchment paper. At the end of baking, you can grate a little extra cheese over the gougères and return them to the oven for a few more minutes.
Serve warm or at room temperature.
