Ingredients

24 pieces
  • Crust
  • 2 1/2 cupscake flour (about 300 grams)
  • 1/4 cupwhole milk powder (about 30 grams)
  • 1/4 cupcheese powder (about 30 grams)
  • 3/4 cuppowdered sugar (about 100 grams)
  • 1/4 teaspoonsalt
  • 2/3 cupunsalted butter (about 160 grams)
  • 1whole egg + 1 egg yolk
  • Filling
  • 21 ouncespineapple filling (about 600 grams)

Steps

    Let the unsalted butter come to room temperature and mix it until smooth.

  2. 2

    Add sifted powdered sugar and salt to the butter, and mix well.

  3. 3

    Add the whole egg and egg yolk, and mix.

  4. 4

    Sift in the whole milk powder and cheese powder, and mix.

  5. 5

    Add sifted cake flour and mix until it forms small granules, then knead by hand until it comes together.

  6. 6

    Wrap the dough in plastic wrap and refrigerate for 30 minutes.

    Divide the dough into 24 equal portions, and do the same with the pineapple filling.

  8. 8

    Indent the dough to wrap the filling without cracking or exposing it, then press into a mold.

    Preheat the oven to 390°F (200°C) for 5 minutes, then bake at 340°F (170°C) for 15 minutes, flip, and bake for another 5 minutes at 340°F (170°C). Done!
