Candied Orange Peels and Candied Orange Slices

Whenever I feel like making Candied Orange Peels, what I do is .....before making fresh Orange Juice in the morning, I just peel the oranges and keep the peels in fridge for few hours till I finish my morning householdchores in a zip lock bag to keep it fresh for a while. So while cooking lunch in between I prepare this too.
I love Candied Orange peels and orange slices too, especially when Christmas is approaching I make it more as I love to add candied peels to my Christmas Plum cake and other fruit cakes and the orange slices to decorate my cakes and cupcakes.
The sugar dredged candied peels you can have it alone as candy just like this or by dipping half a portion in chocolate, it's so flavourful. You can make and gift your family and friends too. They will love it.
You can dip half portion of Candied Oranges slices too in chocolate.
The same thing you can make with Lemon peels and slices.
It's economical to make it at home.
To save time & fuel whenever I make peels I make the slices, it keeps good for few months in a cool dry place.
Navel and Valencia Oranges are good to make Candied Peels.

Wash the oranges well and with a peeler take out the peels of 6 oranges if you don't have one use a knife to peel but try not to cut much of the white pith as it's bitter, so this peeler makes by life easy and I get a long strand of peel, which later you can make it just like that long or cut in small 2- 3 inches length, with knife peel it vertically into thin strips.
Slice the other two oranges, not too thin nor too thick. I got 12 slices from the two oranges - 2

Blanch the peels to get rid of the bitterness of the white pith. I did it twice, as my peels were quite thin and did not have much white pith. If you have more of white pith do it 4-5 times.
Blanching the peels: in a pan take water and peels, the peels should be submerged in water. Put on the stove and bring to a boil, once it starts boiling strain the water and add fresh water and repeat the process.
You don't have to blanch for the orange slices. - 4
Now mix sugar and water and bring to a boil. Once it starts boiling add the slices and the peel and simmer till the peels becomes glossy and fairly translucent. I kept 2 peels long and the rest in cut it into 2-3 inches length.

Once done with the help of a tong or fork take out the slices and the long peels (if you don't like it to be covered in sugar) and keep it on a drying rack and then strain the rest of it. Take out the peels from the strainer and put it in a plate of sugar (take enough sugar to comfortably coat or dredge your peels). Toss and evenly coat all the Candied peels and put it on a wire rack to dry.

Once dried keep the candied slices and the candied in an airtight container.
Use the orange slices to decorate/ garnish / top your cake and dessert or have it just like this.
The peels you can add to your Plum cake, fruit and nuts cake, Orange cake (for this I don't dredge it sugar). - 7
The sugar coated orange peels you can have it like a candy or to make it more decadent dip the peels in melted chocolate (coat only half length of the peels) and fridge it for the chocolate to harden.
You can garnish your cupcakes with it too.
