We usually throw away the Cauliflower Leaves , but as cauliflower belongs to the Brassicaceae or cruciferous family, their leaves are a good source of dietary fiber, iron, essential fatty acids, potassium, calcium, beta-carotenes, folic acid and antioxidants.
They can be eaten raw or cooked. So I made these super delicious and tasty fritters

Ingredients

  • 2 cupscauliflower leaves
  • 1 teaspooncumin seeds
  • 1/2 teaspoonAjwain or caraway seeds
  • to tasteSalt
  • 1/2 teaspoonturmeric powder
  • 1/2 cupor more chickpea flour
  • Pinchbaking soda
  • as requiredOil for frying

Steps

  1. 1

    Wash and chop the leaves finely.
    Add salt, jeera,ajwain, turmeric,green chillies, and chickpea flour and mix.
    Add water as required and pinch of baking soda. Mix well

    Heat oil and drop a teaspoon of the batter, cook from all the sides till nice golden brown.
    Enjoy with ketchup, mayonnaise or mint coriander chutney.
