Crockpot Autumn Vegetable Stew

My first ever crock pot recipe 😊 I’ve wondered if I would like one for ages and came across a vintage gem that had never been used in a charity shop yesterday. Although based on a similar recipe that I often make, I literally popped everything in using upthe veg and lentils I had and hoped for the best, it was totally delicious! As I left the shop I had a lovely chat with a lovely older guy that said not to forget to add some dumplings in the last hour of cooking, which is exactly what I did 😋 @sonia - you were right, I love it!

Ingredients

6 hours
4 people
  • 5potatoes
  • 2 cupschopped greens
  • 4carrots
  • 4parsnips
  • 10button mushrooms
  • 1 cupgreen lentils (washed)
  • 1/2 cuppeas
  • 3 cups vegetable stock
  • 3 clovesgarlic
  • 2 tinchopped tomatoes
  • 1 tspvegan Worcestershire sauce
  • Salt and pepper
  • 1bay leaf
  • 1spring Rosemary
  • 1 tspcornflour mixed with 2 tbs water

Steps

6 hours
  1. 1

    Wash or peel the veggies. Wash the lentils, checking for stones. Peel the garlic, I kept my cloves whole.

  2. 2

    Add everything to slow cooker. Top with tomatoes and stock. Add cornflour slurry. Season to taste. Stir.

  3. 3

    Turn to high. Cook for 6 hours or until veg are tender.
