Aubergine Sauce

Aubergine is an egg plant and I have not tasted it before I only see them from afar whenever I visit the vegetable markets....lol My cousin bought some over the weekend, offered me some and I thought to myself " Bush girl like me what are you going to make with them"...lol so I put together all the methods I see on Food network in preparing this yummy sauce. Haba! I wish this picture could do justice to the palatability of this yummy sauce.... lol Apart from the seasonings and oil every other ingredients had their peels and seeds incorporated in this dish #Cookeverypart #worldfoodday

Cooking Instructions

Wash the all the fresh ingredients, then slice the aubergine.

In a bowl put the sliced aubergines then sprinkle salt and black pepper, drizzle vegetable oil and toss together then place on a lightly grease tray and place in the oven to bake for 10-15mins while flipping to the other side occasionally

Do same for the peppers, tomatoes, onions, garlic and gingers. Do not take off the skin(peels)

Blend the aubergine set aside then roughly blend the pepper, tomatoes, onions, garlic and gingers

In a pan put a cooking spoon of oil,then stir fry the seasoned chicken strips then add one small chopped on on fry until transparent then add the eggplant paste and tomato and pepper mixture and keep frying Add season and correct taste for salt if necessary.

Serve with rice, yam or any fries of your choice.
