Penne Gorgonzola with Blue Cheese

I had leftover blue cheese that I bought for snacking, so I decided to use it to try to make a dish from a restaurant I like.
Make sure you salt the water when you boil the penne (or other pasta).

Boil the penne in salted water for the amount of time listed on the package. Finely chop the onion and garlic.

Put the garlic, olive oil, and onion in a frying pan and turn the heat on. Cook, stirring, over low heat. When the onion becomes translucent, add the white wine.

Now add the blue cheese and stir so it melts into the white wine. When the blue cheese is mostly melted, add the heavy cream and bring to a simmer.

Finally, add the boiled penne. Check the saltiness and adjust the seasoning. Sprinkle with black pepper and it's ready.
