Easy Creamed Corn Croquettes ♪

I learnt how to make cream croquettes at a cookery school some years ago. I was wondering whether you actually need to add beaten egg so I tried making some croquettes without it. They came out delicious and I was really satisfied with them so decided to upload the recipe.

Make sure to mix in the milk a little at a time with a wooden spatula. So that the mixture doesn't burn, cook it on a low-medium heat, as you would when preparing white sauce. Recipe by Pokuchan

Ingredients

3 servings
  1. 1/2Onion (finely chopped)
  2. 7 tbspPlain flour
  3. 200 mlMilk
  4. 4 tbspCanned corn
  5. 1 tspSalt
  6. 1 dashPepper
  7. 1pack Fresh panko
  8. 2cm deep in your frying pan Frying oil

Cooking Instructions

    Grease a non-stick pan with a little oil (not listed in ingredients) and stir-fry the onion well.

    Once the onion has wilted, sift the flour into the pan, and use it to coat the onions over low heat. Before the flour begins to burn, start to add the milk into the pan a little at a time and stir the mixture until smooth.

    Drain the corn and add it to the pan from Step 2, then season the mixture with salt and pepper. Then, stop the heat and transfer the mixture to a plate to cool.

    Once the mixture has cooled, use a rubber spatula to split it into 9-10 portions. Use the spatula to form the shapes of the croquettes as the mixture may stick to your hands.

    Drop each croquette into a bowl filled with panko, then use your hands to press the panko into place.

    Fry each side of the croquette in moderately hot oil until each side is golden brown, then they're ready ♪
