Cooking Instructions

Preheat the oven to 180C. Slice the courgettes in half lengthwise, and place on a baking tray. Drizzle with oil and season with salt and pepper. Roast for 20-25 minutes, turning once after about 10 minutes. Allow to cool for at least half an hour before moving to the next step.

Add the roasted courgettes and all the hummus ingredients into a food processor and process until smooth (it will be slightly greenish, with flecks of darker green). Transfer to a container - it can be eaten immediately, or stored in the fridge.

I love lentils and I love Hummus, so why not put the two together! I had so much fun making this and my family ate all of it in one night. I was kind of envisioning an Indian vibe on the traditional Greek hummus. I didn't have tahini, so I substituted with a paste of cashews and sesame seed oil. The goat cheese really makes this creamy and nice on the pallet. I have decided to go on a hummus experience and I will be testing different nuts and flavors with legumes/beans. I topped mine off with diced kalamata olives and olive oil but feel free to use whatever you like. I hope you try it and if you do please share your thoughts with me.
