Cocoa yam porridge
This is the first time I’ve tried this and it tastes better than I thought. Give it a try
Steps
- 1
Peel, wash and dice cocoa yam into small pieces. Set aside
- 2
In a pot, add palm oil and your blended/grated onions, pepper and chili and fry for 2 minutes. Add 2 cups of water (more or less depending on the consistency you prefer), add your seasoning and bring to a boil.
- 3
Wash the dried fish with hot water and salt and add to the pot.
- 4
Add the cocoa yam to the boiling water and stir. Let cook stirring occasionally. Add spinach and stir well
- 5
If the cocoa yam is soft but it’s still watery, you can use masher and gently mash it to make the porridge thick. Stir well
- 6
When it reaches the consistency you like (some prefer it thicker while others don’t) turn off heat. Serve with plantain or enjoy it like that
