Sfiha (Middle Eastern Meat Pies) with Vegetables

Dissolve the yeast and sugar in 1 1/2 cups warm water and let sit for 5 minutes.

In a bowl, combine the flour, olive oil, and salt. Add the warm water with yeast and sugar, and knead well. Once the dough rises, divide it into small pieces.

Finely chop all the vegetables and add them to the ground meat along with the spices, salt, and tomato paste. Mix everything together thoroughly.

Roll out the dough pieces and place them on baking sheets. Spread the meat filling on top and bake in a preheated oven until the bottoms are golden and the tops are lightly browned. Once out of the oven, cover with a clean towel. Enjoy!
