Macaroni with Roquefort Sauce, Manchego Cheese Cream, and Mushrooms

Garlic chive sprouts.
Thinly sliced fresh chives.
Shredded cheese. Slice everything, mix together, and set aside. This is to top the macaroni at the end.

Add the chopped onion, the two chopped garlic cloves, and about four black peppercorns to a food processor.
Chop as finely as possible without over-processing.
In a wide saucepan, add 1 tablespoon butter and 1 tablespoon olive oil. Let the butter melt.

Once the butter has melted, add the chopped onion mixture. Stir and sauté over very low heat for five minutes, stirring occasionally.
Meanwhile, quarter the mushrooms and add them to the food processor.
Chop the mushrooms finely, being careful not to over-process. Pulse the processor three times, then stop.

After five minutes, add the mushrooms to the sautéed onion and garlic.
Stir with a wooden spoon and cook everything together for another three minutes, stirring occasionally.
Meanwhile, place the Roquefort cheese in the food processor.

Pulse the processor a couple of times to break up the cheese without turning it into a paste, then set aside.
After three minutes, when the sautéed mixture is soft, add 1 tablespoon all-purpose flour.

Stir well with a wooden spoon and cook the flour for a couple of minutes so it doesn't taste raw.
Once the flour is cooked and the mixture comes together into a paste, it's ready.
Add 1 cup whole milk (about 240 ml) and 1/2 cup heavy cream (about 120 ml).

Use a wooden spoon to mix the sauce until it starts to thicken.
Once it begins to thicken, add the Roquefort cheese, 2 oz Manchego cream cheese (about 60 grams), a grind of black pepper, and a pinch of freshly grated nutmeg. Add salt to taste, since the cheeses are already salty. Stir well and cook for about three minutes, stirring occasionally.

Meanwhile, bring a pot of water to a boil. Add a little salt and the macaroni. Stir so they don't stick together and cook according to the package instructions.
After three minutes, remove the sauce from the heat.

Cover and set aside while the macaroni cooks.
After about twelve minutes (or as directed on the package), the macaroni should be cooked. Drain well, serve into portions, top with some sauce, and sprinkle with the cheese, garlic chive sprouts, and chives mixture to taste. Enjoy!
