I bought some lovely brandy-laced mincemeat from the local farm shop but I didn’t really want to make mince pies. So I baked these cookies, the recipe is from Good Food but I adapted it to make them #glutenfree and #dairyfree

I bought some lovely brandy-laced mincemeat from the local farm shop but I didn’t really want to make mince pies. So I baked these cookies, the recipe is from Good Food but I adapted it to make them #glutenfree and #dairyfree

Beat together the marg and sugar until you get a smooth paste.

Add the mincemeat and the egg, continue to beat until all combined.

Fold in the flour, I sifted mine, stop stirring as soon as it is all combined.

Spoon a tablespoon of mix at a time onto a tray lined with baking paper. Allow room for the cookies to spread.

Bake at 180 C for 10-12 minutes. Remove and allow them to cool on the tray - they will harden up as they cool so you can transfer them to a rack once they’ve cooled a bit.
