Almond Polvorones (with Lemon and Cinnamon)

Ever since I learned how to make polvorones at home, we haven't bought a single one at the store! They turn out delicious! Half are made with cinnamon and the other half with lemon. You can make them with any flavors you like.

Ever since I learned how to make polvorones at home, we haven't bought a single one at the store! They turn out delicious! Half are made with cinnamon and the other half with lemon. You can make them with any flavors you like.

Mix the all-purpose flour and ground almonds on a baking sheet. Place in a preheated oven at 350°F (180°C) and bake for 15 minutes, stirring every 3-4 minutes so the mixture toasts evenly.

Once the mixture is a light golden color, remove it from the oven and let it cool.

When cool, mix in the powdered sugar and add either the cinnamon or lemon zest, depending on which flavor you want. I usually divide the mixture in half and make half with cinnamon and half with lemon.

Add the lard and mix well, then knead until you form a ball. Wrap it in plastic wrap and refrigerate for 2 hours.

Take the dough out of the fridge, place it between two sheets of parchment paper, and roll it out with a rolling pin until it's about 1/2 inch (1.5 cm) thick.

Use a cookie cutter to shape your polvorones, place them on a baking sheet, and bake for 10 minutes at 350°F (180°C).

Remove from the oven, let them cool, and dust with powdered sugar. You can wrap them to keep them fresh longer.
