This is special occasion traditional sweets prepared during Bogali bihu in every house in assam this traditional sweet very tasty. And prepared by fresh special type of new rice powder, with jaggery, narial, til with jaggery mix and sweet pita will be done with maida, rice powder, jaggery, Elaichi mix fried in oil. Fresh grated narial ladoo. Special sweet. Till ladoo. Muri with jaggery paste muri laddoo, fresh muri, fresh harvest special rice steamed and mix with, curd, jaggery puree, and another way with milk cream, jaggery, mixed with muri and rice another level to taste. And they will offer the guest local pan, local tambul(kacha supari) with suna and jeera.. #cookpad india#

Ingredients

3hours.
6people.
  • 3cups.Fresh rice .(soaked in water for sometime and, grinded
  • 750 grams.Jaggery for all sweet items
  • 3.Elaichi few
  • as required .coconut
  • 250grams.till
  • 300grams.moori
  • 250gm.maida and rice powder.(combined)
  • 250grams.oil for pita fry
  • 2 cups.thick curd
  • 1 cup.milk cream,
  • 2 cups.jaggery syrup

Steps

3hours.
  1. 1

    First prepare your Rice soaked in a water after soaking for 3 to 4 hours then dry your rice take a cloth spread your rice si that excess water will be drained up nicely. Then your choice for grinding the powder either you take mixie Or pathar ka chakli do grinding slowly. Steadily. If you are using mixie do not do use fast. Give a break in between.. So that your machine will not be repaired.

    Then take your rice powder, actually during bihu time this special variety new rice having, sticking consistency. This is the beauty of this rice. It will able to roll nicely without any drop of water. And, it will be remained as fresh as you can taste and relish the sweet items you are preparing on the same day.

    First stuffing for the narial pita, and til pita you have to prepare..

    Take coconut grate it nicely add your jaggery powder with Elaichi powder mix very well. Before mixing it you have to roast your coconut. So that your stuffing will be long lasting..

    Next you have dry roast your black til remove all the dust, pather from it. Then add your jaggery powder, into semi grind your til(roasted) add Elaichi. Then keep it a vessel

    Then take iron kadai it should be in a maximum heat then take a spoon(wooden or steal) your wish pour two spoon with the help of your hand spread it like minimum dosa Or roti size you have bare with the heat by practise it will come within 2minutes it will be cooked add immediately add your stuffing your narial Or till paste then immediately close it roll immediately with your hand in the tawa itself it is very important job. Then your til oita, narial pita ready. Keep it, in jar and enjoy.

    But all the pita will be done during this season rice only. Otherwise it will be tough to prepare and rolling with your hand without any drop of oil..

    Sweet pita Take maida, rice powder, jaggery paste, mix with water little bit give a good throwing stage and addelachi powder heat your refined oil and pour slowly fry it in a golden brown, then your sweet pita ready.

    Muri ladoo:clean and dry roast your moori keep it away. Prepare jaggery paste and, mix immediately with your moori and prepare your ladoo. One important stage I have to mentioned your jaggery preparation when you are preparing when it is going for a right stage then take a vessel pour some water then check your jaggery paste pour it in a water take your hand and check your jaggery rolled like small ball.

    Prepare your curd in assam during, bihu festival they will take only cow milk (kacha) without heating process.. They will prepare in clay pots only. Very healthy way..
