Korean Egg Roll (Gyeran Mari)

Korean Egg Roll (Gyeran Mari) is a very simple and easy healthy snack or side dish that can be made in 15-20 minutes.
Gyeran Mari is made with beaten eggs mixed with ingredients such as onion, carrot, salt, processed meat or seafood (optional). When serving, the omelette roll is cut into thick slices.

Beat eggs in a mixing bowl. Then add carrots, onion, dried kasuri fenugreek, black pepper, chili flakes and salt. Whisk until all is well combined.

Heat a nonstick pan over medium-low heat. Spread or grease oil on pan. Then pour 1/2 egg mixture and cook for 2-3 minutes until the base is cooked. With the help of spatula, roll up the omelette halfway. Then move the egg roll to the edge of the pan.

Grease the pan with oil each time you roll an egg. Pour ½ egg mixture from remaining egg mixture on the empty space of the pan and on the unrolled egg so that the fresh egg mixture will stick to the unrolled part and the egg roll can continue.

Cook for 2-3 mins until the base is cooked, then roll it halfway and move the egg roll to edge of the pan.
Repeat this process 1 or 2 times, until all egg mixture is poured and finally roll it till end. - 5
Cook egg roll for 1-2 mins to get it cooked inside too. Don't overcook. Switch off the gas.
Transfer the egg roll from the pan to a cutting board and allow to cool before cutting into thick slices. - 6
Remove slices to a plate and serve it with tomato ketchup.
