Perfect for those summer nights when your garden is bursting with fresh produce. I use zucchini, garlic and any other herbs I’ve got growing in my organic veggie patch.
Steps

Mix all ingredients in a large bowl until combined.

Check the mixture can form into balls. If it’s too dry, add a tbsp of olive oil.

Once combined, in a dish, add the plain flour.

In a frying pan add the olive oil - enough to reach the sides of the zucchini fritters.

Heat the oil

One by one, using a tbsp, roll a ball of the mixture into the flour - lightly.

Place the ball in the frying pan and press the fritter so that it flattens slightly.

Repeat until the pan is full of fritters.

Cook in batches, do not attempt to turn the fritter until it has cooked enough on one side. Turning the fritter too often may result in the fritter breaking apart. Two or three turns is enough.

Remove gently from pan and plan onto kitchen paper to drain excess oil.

Transfer to a plate, sprinkle with a bit more salt if needed and serve with tzatziki!
