Cashew and Coconut fried rice

In a hot pan add the olive oil and onions and fry for a minute

Next add the carrots and basmati rice and pour the coconut milk, give a mix and wait until the coconut milk as reduced

Once reduced place in a bowl, sprinkle the shredded cabbage and cashew nuts, and drizzle the soy sauce over
- 4
I also used chopped spring onions and coriander for more flavor but that is optional
- 5
