Broccoli Paratha

Broccoli, a winter vegetable and full of nutrients and vitamins, we need for our body. I prepared very delicious parathas with Broccoli and served my family as brunch with Rajma curry and tomato Til Chutney.
I blanched the broccoli florets in microwave, without add water for 3 minutes and mashed with a medium boiled potato and cooked with masala for the stuffings. Roasted the parathas with ghee.

Mix the ingredients and with little water at a time make Paratha dough. Rest the dough, covered for 30 minutes.

Heat oil on a pan. Add cumin and fennel seeds and allow to crackle. Fry the chopped chilli for 30 seconds.

Roast the onion masala till the oil separate. Add the grated potato, a pinch turmeric powder and saute on low flame.

Add the blanched and mashed broccoli, salt and mix well. Add garam masala powder and roast on low flame till aromatic and done.

Divide the dough and make balls. Stuff broccoli stuffings and close the ball as shown in photos.

Roll out the parathas with dusting flour. Roast each stuffed parathas in medium flame with ghee till both sides are well done.

Serve hot Broccoli Parathas with curry pickles and chutney.
