Three Cup Chicken (三杯鳥)

This is a Taiwanese staple dish that I'd seen in many restaurants, so I tried to replicate it somehow. Probably needs some greens like Thai basil or at least scallions but I didn't have time to get those. 🇹🇼🐓

Mix all of the sauce ingredients in a small bowl.

In a wok or pan heat sesame oil on high heat. Fry the ginger for a couple of minutes. Add the chicken and stir fry for a few minutes until no longer pink.

Add sauce mixture and stir. Reduce heat to medium low and cover, let simmer for about ten minutes.

Mix a slurry of cornstarch and 1 tbsp water. Mix into the sauce and raise heat to high, bring to a boil then lower heat to medium low and let simmer until sauce thickens, about five minutes. Add sesame seeds and serve with steamed rice.
