Ingredients

  1. Ingredients for Kabiraji Cutlets
  2. 4large potatoes cut into chunks
  3. 8eggs (4 boiled, 4 raw for other purpose)
  4. 2 tspoil
  5. 1 cupsliced onion
  6. 1 tsppaach foron
  7. 1/2 tsproasted cumin
  8. 1 tspgarlic and ginger paste each
  9. 2 tspchopped green chilli
  10. 1/2 tspchilli powder
  11. 1/2 tspcoriander powder
  12. 1/4 tspgaram masala
  13. 1/4 cupchopped fresh cilantro
  14. 1 cupcooked ground meat of your choice
  15. 1/4 cupfried onion (optional)
  16. 1/2 cupbread crumbs (for mixing)
  17. 1 1/2 cuppanko bread crumbs (for crust)
  18. salt for seasoning
  19. 3/4 cupoil for frying
  20. 1 1/2 tspcorn starch in a bowl
  21. 2 tspmilk

Steps

    Step 1- Cut 4 large potatoes cut into chunks. In separate pots put potatoes and 4 eggs to boil. Eggs will be hard boiled. Once the potatoes are tender, strain. Eggs should be done too.

    Step 2- Cool the eggs and coarsely mash the potatoes while hot

    Step 3- Heat 2 tsp oil on med heat. Add 1 cup sliced onion, 1 tsp paach foron, ½ tsp roasted cumin. Cook for a min. Then add 1 tsp garlic and ginger paste each, 2 tsp chopped green chilli, ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp garam masala. Cook till onions are soft…about 2, 3 minutes

    Step 4- Add the mashed potatoes. Cook for 5 mins while mixing everything in. add ¼ cup chopped fresh cilantro. mix it in. cook for a min. season with salt

    Step 5- add 1 cup cooked ground meat of your choice. I used beef. Its optional to add meat. mix well

    Step 6- let it cool

    Step 7- once cool, grate the 4 boiled eggs onto the cooked potato,add ¼ cup fried onion…optional,add ½ cup bread crumbs. This was seasoned, that’s what I had on hand. Regular works too. mix everything in

    Step 8- Form a ball and make into a oval’ish cutlet shape.Pack it in firmly and cutlets are ready. Put it in the fridge for an hour to firm it up

    Step 9- Crack 2 eggs, season with salt. Whisk

    Step 10- Dip the potato cutlets in egg, then crust it nicely with panko bread crumbs. Panko is just a personal choice..regular bread crumbs will do too

    Step 11- heat ¾ cup oil on med heat. Shallow fry 2 mins per side. Since everything is cooked, just need some color on the cutlets. Once the cutlets are done, lower the heat to low. Same pan and oil will be used for another step

    Step 12- add 1 ½ tsp corn starch in a bowl, 2 tsp milk,Whisk till smooth. Crack 2 eggs.And whisk again

    Step 13- In the same pan on low heat, Using fingers drizzle the slurry. It will create a net.

    Step 14- Dip the cutlet in egg. Then drop it in the centre of the net. Roll the cutlet in the net so that its covered in the net. And fry for 2 mins per side till nice golden color reached. That’s it, all done. Enjoy !!

I love cooking because its fun. It’s a way to express myself. Its an universal language which everyone understands. Cooking is an art where a doodle can be delicious. Its all about experiencing the flavors of the world and enjoying it. It’s a continuous learning process which is never ending but its fun and fulfilling. Cooking is food for my soul. It gives me an opportunity to nurture my family and friends, express my love and care for them.
