Chalupa is a famous Mexican dish I enjoyed in a popular food outlet called Taco bell in the USA. Chalupa means a boat in Spanish. That's why chalupa bread is bent in the middle to give it a boat shape.
Chapupa is a soft and crunchy boat shaped bread stuffed with beans/falafel, crunchy veggies, Mexican sauces and cheese.
It is a very easy dish and not much time-consuming specially when you have a vegetable chopper.

Ingredients

8 servings
  • for Chalupa bread-
  • 1 cupwheat flour
  • 1 cupall purpose flour
  • 1.5 tspsalt
  • 1.5 tspbaking powder
  • 1 tspcumin powder (optional)
  • 2 tbspmelted butter
  • 1 cupmilk at room temperature
  • As required oil to fry
  • for Beans stuffing
  • 1 cupdry rajma beans (soaked overnight)
  • 1/2 tspsalt
  • 2 cupswater
  • 1 tbsptaco bell seasoning
  • 1 tbspgarlic powder (replaceable with garlic paste or chutney)
  • 1 tbspchilli flakes
  • as per taste Salt
  • To assemble-
  • 3-4 tbspfinely chopped bell pepper (any colour)
  • 3 tbspfinely chopped tomatoes
  • 3 tbspfinely chopped tomatoes
  • 4-5 leaveslettuce
  • as required Taco bell sauce (I combined diablo, fire and hot sauces)
  • 3-4 tbspsour cream (replaceable with regular mayonnaise)
  • 8-10 tbspgrated cheese (cheddar and mozzarella mix)

    Discard water from the soaked beans. Transfer them in a pressure cooker and add 2 cups of fresh water and salt. Close the cooker and cook on medium to low flame for about 20 min or till it blows 5-7 whistles. (I used 2 types of fresh beans, so there was no need to soak them. Since they were fresh and hydrated, I used 2 cups of beans in total). Drain out the water from the beans when the cooker cools down. The beans should have been thoroughly cooked. Keep the water from the beans.

    Add spices to the beans and mix well. Slightly mash them after all the spices get evenly mixed. Do not mash too much to make it too dry and pasty. Add a bit water (reserved from the cooked beans) if needed.

    Chalupa bread : Start making chalupa closer to the time to serve so you can consume them while they are warm. Rest of the preparations can be done in advance. Consider about 20-30 minutes of resting time for the dough.
    Chalupa is supposed to have a bit of crunch on the outer layer, but the inside should be soft..almost like Bhature.

    Combine all dry ingredients for the dough. Add butter and mix well.

    Next, add a little milk at a time and make soft dough like for roti. Apply oil all around and rest aside for 30 min. Knead it then after until it's smooth. Make 8 equal size balls from it.

    Heat up oil in a fry pan on low flame. Start rolling the bread. Roll it thick like bhakhri. Make cuts all over it with a fork or knife so that it does not puff while frying. You may also gently press the rolling pin in the centre to make it easy for you to fold the bread while frying.

    Gently transfer the bread into the moderately hot oil. Flip it after a minute. Allow it to turn light golden on both sides. At this time the bread is still tender and can easily be bent. Fold it to make it like a shell. Fry and flip till it gets evenly golden brown all around. Drain out excess oil and transfer it in a plate. Repeat.

    You may leave them flat if you wish to enjoy chalupa with a flat bread. In fact it tastes better in a flat bread.

    Serving: set the table with all the salad items, sauces and the chalupa bread.

    Assembling: spread the beans very well all over the bread. Spread the sour cream and the sauce over it. Sprinkle the salad veggies followed by the cheese on the top. Yummmm. Enjoy!

    You may also do the similar assembly on a flat bread instead of a shell. Once all the toppings are done on a flat bread, you can cut it like pizza. It is actually better on a flat bread because 1. All the toppings are distributed evenly. 2. It's less messy to eat.

    Special ingredients used from the US...1. taco bell seasoning mix 2. Sauces from Taco bell- diablo, fire, hot and mild (my favorite is fire 🔥). These sauces can easily be replaced with any other hot chilli sauce like Nali hot. You can also add chick-fil-a sauce which tastes like a combo of sweet mayonnaise(like Nola's Ultra creamy mayonnaise)and mustard sauce
